What makes Chablis special are the soils: chalky and mineral-rich, most of them were created by the fossil shells of a small oyster, which is ironic because Chablis is a classic choice with any kind of seafood. You can really taste Chablis’ famous soils in this well-balanced, minerally wine, which offers fresh, vibrant golden apple and Meyer lemon fruit and a steely backbone.
